Dutch Peach Pie

Happy Wednesday ya’ll. Yes here I am on Wednesday again. But hey, you know what they say, better late than never. And since I am late I have got a special treat for you today.

You know me, I love going through Miss Patti’s Cookbook. The recipes are amazing and some of the stories are so funny. And I happened to read a story that I have obviously overlooked all these years. There was a recipe connected to the story so it was a win, win for me, as I can tell you the story and share the recipe as well.

Miss Patti titled her memory “The Freezer Story”.

It seems Miss Patti was at the restaurant a couple hours before anyone else was scheduled to come in. She was gathering items to make a peach pie and walked into the old walk-in freezer, to gather more items. And to her horror the heavy, freezer door shut behind her. It was an older freezer and ice had formed a tight seal around the door, effectively locking it shut and in her words, “Sealing me in tighter than a tomb.” The safety latch that

should have allowed her to open the door was also frozen solid and could not be budged. She was fighting back panic when she grabbed the large can of peaches she had brought with her into the freezer. She started to gently pound the can against the latch, being careful not to hit it too hard, finally after a lot of shivering and pounding the latch finally gave way and she was freed from the freezer and in the warm kitchen again. She later learned that if she had been in the freezer just 15 minutes longer she would have gone into severe hyperthermia. She ended the story by saying that “being forever grateful for the can of peaches that saved my life and prevented me from turning into an ice cube, I give this peach-lovers recipe as a testament to my “great escape.”

And I am sharing that peach-lovers recipe with you today, You may have had it at Patti’s before. It is our Dutch Peach Pie. And one of my favorites. I know I did peach cobbler last week, but this is totally different and such a wonderful memory of Miss Patti and her antics in the kitchen.

Now, you will need 2 eggs beaten, 2 TBSP melted butter, 1 can sweetened condensed milk, 2 cups peaches, 1/3 cup sugar, ¾ cup all purpose flour, 6 TBSP butter, ½ cup chopped pecans, 1 single pastry pie crust. Bake your pie crust at 400 for a few minutes. Then pour peaches into crust. Mix eggs, The 2 TBSP melted butter and sweetened condensed milk together. Pour over peaches. In medium bowl mix sugar and flour, cut in the 6 TBSP butter until crumbly. Put this mixture on top of pie and sprinkle with pecans. Bake at 350 for 20 minutes. We serve this at Patti’s drizzled with some caramel and whipped cream or a scoop of vanilla ice cream. Either way, it is an amazing dessert that will become a family favorite. And the story just made it a little sweeter for me.

Until Next Time,

Bev

A useful name generator should offer variety, and that’s what I noticed here. It’s easy to browse through different naming styles without feeling repetitive.
