Happy Tuesday Everyone!! I hope you all had a very happy Thanksgiving. I certainly did. At home and at Patti’s. I cooked at home for my family and then that evening I went to Patti’s to help others enjoy their Thanksgiving as well. Just from memory I think the kitchen prepared 80 turkeys, 25 full size pans of sweet potatoes, 30 full size pans of dressing and more pies than they could keep count of. It was a great day for sure.
Now that all the leftovers are gone, I am back to my task of trying to think of something to fix for lunch. I mad the ham salad, the turkey salad and soup from all the rest.
So yesterday in a desperate attempt to cook something that would in no way resemble Thanksgiving food, I choose BBQ meatball subs. These were a big hit and as usual quick and easy.
You can do these a couple different ways. I tossed some hamburger in a bowl, added bread crumbs, egg, thyme, garlic and onion powder. I rolled those meatballs out and baked them for
about 30 minutes. While I was doing this I was heating my bbq sauce in a sauce pan. I used Patti’s BBQ sauce because it has just the flavor I was looking for.
When my meatballs were finished I put them in my sauce and simmered for about 15 minutes and then put them on a hoagie bun, added a slice of swiss cheese and some French fried onion and placed them in the oven to broil. Just long enough to melt the cheese. These were so very yummy. I may have another one today.
Now if you like to cook in a crockpot you can buy the frozen meatballs, and slow cook them in the sauce all day and then fix your sandwiches. Either way they are delicious!! Patti’s BBQ Sauce is available at Patti’s 1880’s Settlement or online at pattis1880s.com
